Ingredients:
1 lb ground chicken (I used Mighty Spark brand)
1 can diced tomatoes (14.5 oz)
1 teaspoon oregano

1 teaspoon garlic powder

2 teaspoons salt, divided

Method:
Mix the ground chicken with 1 teaspoon of salt and roll into 16 meatballs. (I like Mighty Spark brand because it doesn’t need a binder.) Brown the meatballs in a medium-sized, nonstick skillet over medium heat until cooked almost completely through, about 10-15 minutes. Add remainder of ingredients to the skillet and cook covered on medium heat for 5 minutes. Remove lid and cook uncovered for 5-10 more minutes, until tomato sauuce thickens slightlly. Remove from heat and serve meatballs over pasta or veggie noodles!
