Ingredients:
1 1/2 cups raw pumpkin seeds, removed from a large pumpkin
1 tablespoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
4-6 packets granulated stevia

Method:
Preheat oven to 350°F. Wash and dry the pumpkin seeds to remove all pumpkin guts from them. Add the seeds to a sealable bowl. Lightly spray the seeds with cooking oil and add the other ingredients. Cover and shake to mix. Spread the coated seeds in a single layer on a foil-lined baking pan that has been lightly sprayed with cooking oil. Roast for 30-45 minutes, stirring occasionally.
