1/2 cup plain nonfat greek yogurt (100 g)
1/2 cup light buttery spread* (112 g)
1/2 teaspoon vanilla extract
8-10 packets of stevia, to taste
1 & 1/4 cups oat flour (112 g)
1/2 pack unflavored gelatin (3 g)
1 & 1/2 teaspoon baking powder
1/4 teaspoon salt
Preheat oven to 350°F. Using an electric mixer, cream yogurt, butter spread, stevia, and vanilla. Add oat flour, gelatin, baking powder, and salt. Mix until combined completely. Using a melon scooper (or tablespoon), scoop cookie dough onto a baking sheet. Bake for 20-25 minutes, until the tops of the cookies are slightly browned.
