2 cup oats (160 g)
1 egg white (35 g)
1 teaspoon vanilla extract
2 tablespoons apple cider vinegar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cranberries (55 g)
1-2 medium apples, diced with skin removed (200 g)

Preheat oven to 350°F. Blend all ingredients except cranberries and apples until batter is smooth. Add apples and cranberries and pulse blender until batter is mixed but there are still some chunks of both apple and cranberries remaining. Spoon mixture into 18 cups of a lightly sprayed mini muffin tin. Bake 50-55 minutes until the tops begin to brown and a toothpick inserted in it comes out clean.
