1/4 cup oat flour (20 g)
1/3 scoop vanilla plant-based protein powder* (10 g)
1-2 packets granulated stevia, to taste
1/8 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon pumpkin pie spice
1/4 cup canned pumpkin, unsweetened (50 g)
1 teaspoon water, if needed
1 tablespoon ground cinnamon
In a small bowl, combine all ingredients except water and cinnamon until a stiff dough forms. (Add water if necessary to reach this consistency.) Shape the dough into 3-4 equally sized balls. Roll the balls in the cinnamon, completely coating them.
