3 tablespoons oat flour (15 g)
1/3 scoop vanilla whey protein* (10 g)
3/4 teaspoon baking powder
1/8 teaspoon salt
4-5 packets of stevia, to taste
1/2 cup water, divided
1/4 teaspoon vanilla extract**
1 large egg, preferably beaten
1/2 cup riced raw cauliflower, steamed and mashed (100 g)
Mix the first five dry ingredients in a small bowl. Add roughly 1/8 cup of the water to the dry ingredients and mix until smooth. Add the extracts, egg, and remaining water and stir until combined. Add the cauliflower and stir until combined. Pour batter into a heated waffle maker that has been greased. Cook for 2-5 minutes, depending on the waffle maker, until a crust forms and waffles can be removed. Serve with chicken for some delicious chicken and waffles!
