Ingredients:
3/4 cup oats, ground into flour (60 g)
1/2 cup Masa Harina de Maiz corn tortilla mix (60 g)
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsweetened cashew milk
2 teaspoons white vinegar
1 can diced tomatoes & green chilies, drained (10 oz)

Method:
Mix the first five dry ingredients together in a medium bowl. Gradually add cashew milk then vinegar, stirring with each addition. Stir until a thick batter forms. Add the diced tomatoes & chilies to the batter and stir. Pour batter in approximately 1/4 cup portions into a prepared waffle maker. Cook for 2-5 minutes, depending on the waffle maker, until a crust forms and waffles can be removed.
