1 scoop vanilla whey protein* (30 g)
2 teaspoons unflavored gelatin (7 g)
2 cups unsweetened cashew milk
1/2 teaspoon mint extract
4-6 drops green food coloring
1/2 teaspoon salt
10-12 packets of granulated stevia, to taste
2 squares semi-sweet baking chocolate, cut into chunks (14 g)

Combine the first five ingredients in a shaker bottle and shake to combine. Pour the mixture into a small saucepan and heat over medium heat, stirring occasionally until gelatin is dissolved. Pour the mixture into a prepared ice cream maker, add the salt and stevia, and use the ice cream maker according to manufacturer instructions. Once the ice cream is made, mix in the baking chocolate.
