1/4 cup oat flour (20 g)
1 1/3 scoop vanilla whey protein* (40 g)
1 teaspoon baking powder
8 packets stevia, to taste
1/8 teaspoon salt
2 large eggs
2 teaspoon vanilla extract
2/3-1 cup water, as needed
1 cup fresh blackberries (145 g)
Preheat oven to 350°F. Mix the first 5 dry ingredients together. Add approximately 1/3 cup of water and mix until combined. Add egg and vanilla and mix well. Add remaining water until a batter-like consistency forms. Divide the mixture evenly into 6 cups of a lined or greased muffin pan. Divide the blackberries evenly among the cups of batter. Bake 15-20 minutes until a toothpick inserted in it comes out clean.
