2/3 cup oat flour, divided (25 g)
1/3 scoop unflavored whey protein* (10 g)
1 large eggs
1/2 teaspoon vinegar
1/4 teaspoon baking soda
1 teaspoon baking powder
1/8 teaspoon salt
Preheat oven to 350°F. Blend 1/4 cup oat flour and all other ingredients until batter is smooth. Divide the mixture evenly into two cup-sized Pyrex bowls that have been sprayed with cooking oil. Top with the remaining oat flour. Bake 8 then broil until slightly browned on top. Remove to a cooling rack and split the English muffin using a knife.
