Ingredients:
1 small head raw cauliflower, steamed (630 g)
2 tablespoons light butter spread (28 g)
1 teaspoon minced garlic
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon dried parsley
3/4 cup fat free feta, crumbled (42 g)

Method:
Preheat oven to 400°F. Blend all ingredients except parsley and feta until the cauliflower is the consistency of mashed potatoes. Mix in parsley. Divide cauliflower mash evenly among three ramekins that have been sprayed lightly with cooking oil. Bake for 10 minutes. Top each ramekin of cauliflower mash with 1/4 cup of feta and bake for 5 minutes more.
