Ingredients:
1 1/4 cup oats (100 g)
1 scoop vanilla or banana-flavored whey protein* (25 g)
2 medium over ripe bananas (225 g)
2 large eggs
2 teaspoon vanilla extract
1 tablespoon vinegar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup “cup-for-cup” stevia baking blend
1/8 teaspoon salt
1/2 cup fresh blueberries (100 g)

Method:
Preheat oven to 350°F. Blend all ingredients except blueberries until batter is smooth. Add blueberries and stir by hand to incorporate. Divide the mixture evenly into 12 cups of a lined or greased muffin pan. Bake 10-12 minutes until a toothpick inserted in it comes out clean.
