2 scoop vanilla whey protein* (60 g)
1 teaspoon unflavored gelatin
1/4 teaspoon salt
14 packets of granulated stevia
2 cups unsweetened cashew milk
1/2 teaspoon peppermint extract
2 teaspoons vanilla extract
1 crushed peppermint candy cane (15 g)
Combine the first four dry ingredients in a bowl. Add the cashew milk gradually, stirring continuously so that the dry ingredients fully incorporate into the liquid without clumping. Add the extracts to the milk mixture and pour everything into an ice cream maker. Use the ice cream maker according to manufacturer instructions. Stir the crushed candy cane into the finished ice cream. Enjoy!
