1 small head of cauliflower (670 g)
6 tablespoons unsweetened cocoa powder (30 g)
1/2 cup unsweetened almond milk (120 mL)
1 teaspoon mint extract
1/2 teaspoon salt
10-12 packets stevia, to taste
Cut and steam cauliflower until tender. Drain cauliflower (if applicable). Chop steamed cauliflower into smaller pieces, making it easier to blend later. Freeze steamed cauliflower overnight or until solid. Blend frozen cauliflower with cocoa powder, mint extract, milk, salt, and stevia until smooth. Divide into bowls and enjoy!
If you are only eating one serving initially, then you can refreeze the remainder of ice cream and re-blend it later.
