2 tablespoons oat flour (10 g)
1/4-1/3 scoop vanilla whey protein (15 g)
1/4 teaspoon baking powder
1/4 teaspoon salt
2-3 packets stevia, to taste
1/4 cup (scant) non-fat plain Greek yogurt (50 g)
2 tablespoons lemon juice
1/3 cup fresh blueberries (25 g)

Add the first 4 dry ingredients to a microwave-safe bowl and combine. Add the yogurt and lemon juice and mix. Gradually add water to this mixture until a thick batter forms. Microwave batter for 1 1/2 – 2 minutes, allowing the cake to sit in the microwave for an additional 1-2 minutes after the cake has finished microwaving. Remove from microwave and enjoy!
