Ingredients:
2 cup oats (160 g)
3 medium apples, diced with skin removed (270 g)
2 large eggs
2 teaspoon vanilla extract
1 1/2 tablespoons apple cider vinegar
1 teaspoon baking soda
1 teaspoon baking powder
5-10 packets stevia, to taste
Pinch salt, to taste

Method:
Preheat oven to 350°F. Blend all ingredients except apples until batter is smooth. Add apples and pulse blender until batter is mixed but there are still some chunks of apple remaining. Pour mixture into a prepared loaf pan. Bake 20-25 minutes until a toothpick inserted in it comes out clean.
