Ingredients:
1 (15 oz) can chickpeas
1/2 cup peanut flour (60 g)
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking powder
3-8 packets stevia, to taste
Dash salt
2 tablespoons chocolate chips, optional

Method:
Preheat oven to 350°F. Blend all ingredients (except chocolate chips, if you are using them) until smooth. The batter should be very thick. If you are using chocolate chips, stir these into the batter. In a prepared small-medium sized cast iron skillet, spread the batter so that it covers the entire skillet. Bake for 15-20 minutes until top begins to brown. Remove the skillet from the oven and allow to cool slightly before serving (possibly with some ice cream or fudge!).

Notes: You can alter the baking time slightly, depending on how doughy or done you want the cookie. Just be sure not to over bake the cookie, or it will get dry. Also remember that the cookie will continue to cook after it is removed from the oven.
