Ingredients:
1 can black beans (15.5 oz)
1/2 cup unsweetened cocoa powder (40 g)
1/4 cup nonfat Greek yogurt (60 g)
1/2 cup canned pumpkin
2 large eggs
1/2 teaspoon corn starch
2 teaspoons vanilla extract
1 teaspoon instant coffee
1 1/2 teaspoon baking powder
1/4 teaspoon salt
5-10 packets stevia, to taste

Method:
Preheat oven to 350°F. Blend all ingredients together until batter is smooth. Pour mixture into two prepared 3 cup rectangular Pyrex dishes (an 8×8 pan would probably also work but I have not tested this). Bake 20-25 minutes until set.
