Ingredients:
1 1/4 cup oats (100 g)
1 cup frozen cauliflower, thawed (85 g)
1 large egg
2 tablespoons low fat mayonnaise
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Method:
Preheat oven to 400°F. Add oats, cauliflower, and egg to a blender and blend until smooth. The mixture should resemble a thick paste. To the blended mixture, add the mayonnaise and mix just until completely incorporated. Mix remaining ingredients together in a small bowl then add to the blended mixture, stirring just until combined. Drop five evenly-sized biscuits (roughly 1/4 cup portions) into a small, lightly greased iron skillet so that the drop biscuits are barely touching (a baking sheet would probably work too, if you don’t have an iron skillet). Bake for 10-15 minutes until the tops of the biscuits begin to brown. Remove from oven and allow to cool slightly before serving.
