Ingredients:
3 cups frozen cauliflower, thawed (250 g)
3/4 cup oats (60 g)
1/4 cup unsweetened cocoa powder (20 g)
2/3 cup unsweetened cashew milk
1 large egg
1 tablespoon vanilla extract
2 teaspoon baking powder
1/4 teaspoon salt
8-10 packets stevia, to taste

Method:
Preheat oven to 350°F. Add all ingredients to a blender and blend until smooth. Line 10 cups of a muffin pan with cupcake liners and spray the inside of the liners lightly with cooking spray. Pour blended mixture into the lined cups, distributing the batter evenly. Bake 20-22 minutes until set. Frost with my Skinny Cream Cheese Icing!
